Intuitive eating does not mean that I no longer eat treats. It simply means that when I do choose to eat them I want them to be not just yummy but healthy(ish) too.
There are many times I have used food for comfort in my life. This recipe was inspired by my need for comfort plus my desire to make healthier choices.
In recent months I have become more aware of when I am eating out of a need to soothe myself. That awareness has made it easier to not let food be my go-to for dealing with my emotions. Until I could get there this pudding was an option that didn’t bring me down the guilt rabbit hole.
1 Avocado, ripe – flesh only
1 Tbs. Nut butter
1 Tbs. Cocoa powder
Vanilla stevia, to taste
Coconut milk or milk alternative
Place the first 4 ingredients in a blender or food processor and slowly add a splash at a time of milk and blend until desired consistency. Enjoy!
